As it seems like the Helix /streams endpoint doesn’t include the follower count of the channels returned, is there a workaround to obtain that number without having to pull the /users/follows endpoint for each live channel individually?
Would a solution be to add the follower count to the /users endpoint?

Nope, you have to go call the followers endpoint
It’s a toss up, since not all “users” are “streamers” and thus won’t have “followers” so would seem they dropped it for performance reasons.
So you can fetch and cache it yourself instead.
